Abstract:

Banana plant is a kind of plant that not only grows well but also reproduce easily in tropical
climate, like Indonesia. Banana contains lot of starch that consists of carbohydrates that can be
processed into glucose by using hydrolysis process.
Hydrolysis of banana starch with hydrochloric acid as a catalyst perform in a flask
equipped with stirrer, thermometer, heater and cooler. The study was conducted with variable
temperature and concentration of catalyst.
The result of the research shows that the hydrolysis reaction of banana starch with
hydrochloric acid catalyst is first-order reaction. By using raio of starch and water 1 g :100 mL, 2,5
N hydrochloric acid concentration and reaction temperature 90oC, obtained reaction rate constan
k=0,485 1/minutes. Reaction rate constant is a function of temperature expressed by equation :
k = 1.0106 exp(-1844/RT),in minutes-1 , and reaction temperature (T) in Kelvin.
